Bright Broccoli Recipe
The flavor of this Bright Broccoli recipe has played on my senses so much that I hardly ever go for any other Bright Broccoli recipe. It is the perfect choice for Side Dish. Ingredients
1 package (10 ounces) frozen broccoli
1 can (1 pound) whole tomatoes
2 tablespoons butter
2 teaspoons flour
1 teaspoon minced onion
1/4 teaspoon salt
1/4 cup cracker crumbs
2 tablespoons grated Parmesan cheese
Directions
Cook broccoli according to package directions until almost tender.
Drain.
Drain tomatoes, reserve juice.
Heat 1 tablespoon of butter with flour, onion and salt, then stir in tomato liquid.
Cook and stir until mixture boils and is thickened.
Place broccoli in center of buttered shallow 1-quart casserole.
Slice tomatoes in half crosswise and arrange around broccoli.
Spoon sauce over vegetables.
Melt remaining tablespoon of butter and mix with crumbs and cheese.
Sprinkle over casserole.
Bake in a 350° F.oven for 20 minutes.
This casserole can be prepared in advance, refrigerated, and baked at serving time.
Add 15 minutes to baking time.
Do not sprinkle crumb mixture on vegetables until casserole is ready to go into oven.
