1 pound lean duck breast meat, skinned and cut into 2 X 1/2-inch pieces
 
3/4 cup chopped watercress
 
1/2 cup quartered water chestnuts
 
1/4 cup Ligh ten- Up Mayonnaise
 
1 tablespoon raspberry vinegar or 1/2 teaspoon raspberry jelly combined with 1 tablespoon rice vinegar
 
4 leaves curly red leaf lettuce
 
1 tablespoon chopped fresh parsley (garnish)

Directions

In a large bowl, gently combine the duck, watercress, and water chestnuts.
In a small bowl, combine the mayonnaise and vinegar.
Pour over the duck mixture and toss until all pieces are coated.
Arrange lettuce on a serving dish, curly side towards the edge, and gently mound duck mixture in the middle.
Garnish with parsley, if desired, chill.
