Breakfast Bacon Pie Recipe

Ingredients
| Eggs | 6 | |
| 21/2 to 3 cups thawed frozen hash brown potatoes | ||
| Monterey jack cheese | 4 Ounce, shredded | |
| Sharp cheddar cheese | 3 Ounce, shredded | |
| Picante sauce | 1 Cup (16 tbs) | |
| 6 thick slices bacon, crisp cooked,crumbled | ||
Directions
Place the eggs in a large mixing bowl and beat until smooth.
Stir in the potatoes, cheeses, picante sauce and half the bacon.
Spoon the potato mixture into a greased deep-dish pie pan.
Chill, covered, for 8 to 10 hours.
Remove from the refrigerator 30 minutes before baking.
Bake, uncovered, at 350 degrees for 25 to 30 minutes.
Sprinkle with the remaining bacon.
Bake for 5 to 10 minutes longer or until a knife inserted in the center comes out clean.
Serve with a dollop of sour cream and additional picante sauce if desired.
