Ingredients

 21/2 to 3 cups thawed frozen hash brown potatoes
 Monterey jack cheese4 Ounce, shredded
 Sharp cheddar cheese3 Ounce, shredded
 Picante sauce1 Cup (16 tbs)
 6 thick slices bacon, crisp cooked,crumbled

Directions

Place the eggs in a large mixing bowl and beat until smooth.
Stir in the potatoes, cheeses, picante sauce and half the bacon.
Spoon the potato mixture into a greased deep-dish pie pan.
Chill, covered, for 8 to 10 hours.
Remove from the refrigerator 30 minutes before baking.
Bake, uncovered, at 350 degrees for 25 to 30 minutes.
Sprinkle with the remaining bacon.
Bake for 5 to 10 minutes longer or until a knife inserted in the center comes out clean.
Serve with a dollop of sour cream and additional picante sauce if desired.
