 Cooked rice3 Cup (16 tbs)
 Shredded Cheddar cheese1 Cup (16 tbs), divided
 Diced green chilies1 Can (10oz), drained
 1 jar (2 ounces) diced pimientos, drained
 Skim milk1/3 Cup (16 tbs)
 Eggs2 , beaten
 Ground cumin1/2 Teaspoon
 Salt1/2 Teaspoon
 Ground black pepper1/2 Teaspoon
 Nonstick cooking spray

Directions

Combine rice, 1/2 cup cheese, chilies, pimientos, milk, eggs, cumin, salt, and pepper in large bowl.
Divide mixture evenly into 12 muffin cups coated with nonstick cooking spray.
Sprinkle with remaining 1/2 cup cheese.
Bake at 400°F for 15 minutes or until set.

What a great recipe, everyone loves it. A great way to start the day, with plenty of protein to carry you to lunch. Tried quinuoa instead of rice, and won't do that again. Great flavors, great food.
