Ingredients

 
1 breadfruit (about 1 1/2 pounds)
 
2 bacon slices, fried and crumbled
 
4 cups Coconut Milk
 
2 tablespoons soft butter (optional)

Directions

Bake breadfruit at 350°F 45 minutes.
Open it and remove the center; peel and dice the meat.
Put breadfruit, bacon, and coconut milk in a bowl.
Puree a little at a time in an electric blender or in a food mill, adding butter if necessary.
Heat.
Serve in bouillon cups and garnish with toasted grated coconut.
Breadfruit can now be found in many supermarkets and most puerto rican markets.
