Ingredients

 
4 to 6 veal loin chops, 1/2-inch (1.5 cm) thick
 
3 tbsp (50 mL) flour
 
1 tsp (5 mL) paprika
 
1 egg, beaten
 
2 tbsp (30 mL) milk
 
2/3 cup (160 mL) fine breadcrumbs
 
1/2 tsp (2 mL) rosemary or tarragon
 
2 tbsp (30 mL) butter

Directions

Mix in a plate the flour and paprika.
Roll each chop in the mixture to coat well.
Beat the egg with the milk in a large plate.
Mix the rosemary or tarragon and breadcrumbs in another plate.
Dip each chop in the milk mixture, then roll it in the breadcrumbs and herbs.
Let stand 30 minutes.
Preheat a browning dish (Corning) 7 minutes at HIGH.
Add the butter, which will brown very fast.
Without removing the dish from the oven, place one chop at a time in the dish, pressing each chop down for perfect contact with the hot butter.
Micro wave at HIGH 3 minutes, plus 3 minutes at MEDIUM.
Turn the chops and let stand 10 minutes at room temperature, without cooking.
Serve with a sauce of your choice.
