Breaded Veal Chops Recipe

Ingredients

 
1/3 cup flour
 
1 teaspoon salt
 
1/2 teaspoon dry mustard
 
1/4 teaspoon pepper, Pinch garlic salt
 
6 thin loin veal chops
 
3 tablespoons milk
 
1 1/2 teaspoons salad oil
 
1 egg,slightly beaten, Fine dry bread crumbs
 
2-3 tablespoons fat
 
2 tablespoons hot water

Directions

Mix together flour, salt, dry mustard, pepper and garlic salt.
Coat chops lightly with this mixture.
Combine milk and oil with beaten egg and dip each chop in this mixture; then roll in bread crumbs, coating completely.
If there is time, chill chops in refrigerator for 1/2 hour to set coating.
Melt fat in heavy skillet over moderate heat.
Fry chops slowly turning to brown well on both sides —about 15 minutes.
Add hot water, cover pan and cook slowly another 15 minutes or until perfectly tender.
Note: Veal steaks or cutlets may be cooked in same way.
