Breaded Sweetbreads Recipe

Breaded sweetbreads is a fried sweetbread recipe made with a breadcrumbs and egg coating. Flavored with parsley and celery, these breaded and fried sweetbreads can be served as a side in meals with a dipping sauce.

Soak sweetbreads in cold water 1 hour; drain.
Put in saucepan with parsley, celery, salt, and water to cover; bring to boil.
Reduce heat; let simmer 30 minutes.
Cool in liquor.
Take out sweetbreads.
Remove fat and connective tissue.
Cut into small, uniform cutlets.
Dip in bread crumbs, then in egg diluted with 2 tablespoons water, and again in crumbs.
Fry quickly in butter until brown; turn frequently.
