Breaded Veal Chops Recipe
Ingredients
2 loin or rib veal chops, about 1" thick
Flour
1 egg, beaten with 1 tbsp. water
Fine dry bread or cracker crumbs
2 tbsp. fat
Salt and pepper
1/4 cup water or cream
Directions
Dip chops in flour, then in beaten egg, then in crumbs.
Brown slowly on both sides in hot fat, seasoning with salt and pepper.
Pour off excess fat; add water; cover tightly.
Simmer 45 to 60 min., or until tender. (It may be necessary to add more liquid from time to time.) Garnish with lemon wedges and stuffed green olives in nest of parsley.
