Ingredients

 
Garlic Butter
 
1/4 Cup (60 ml) butter
 
4 garlic cloves, finely sliced
 
1 tsp (5 ml) lemon juice
 
1 tbsp (15 ml) chopped parsley
 
12 lamb chops
 
1 Cup (250 ml) seasoned flour
 
2 eggs, beaten
 
1 Cup (250 ml) fine breadcrumbs
 
2 tbsp (30 ml) vegetable oil
 
4 tsp (20 ml) chopped parsley

Directions

–  In a bowl, combine all ingredients for garlic butter and set aside.
–  Dredge lamb chops first with seasoned flour, then dip into beaten eggs and finally into breadcrumbs.
–  In a skillet, heat oil and cook lamb chops over low heat for 6 minutes on each side.
–  Place in serving dish, baste with melted garlic butter and sprinkle with parsley.
