Ingredients

 6 pork chops, cut 1 inch [2 1/2 cm.] thick
 Dry bread crumbs1 1/4 Cup (16 tbs)
 Lemon juice4 Tablespoon
 Olive oil1/2 Cup (16 tbs)
 1 egg, lightly beaten
 Water1 Tablespoon
 Parmesan cheese1/3 Cup (16 tbs), grated
 Parsley2 Tablespoon, chopped
 Butter2 Tablespoon
 Salt To Taste
 Pepper To Taste

Directions

Combine the lemon juice, 1/3 cup [75 ml.] of olive oil, the salt and pepper.
Marinate the chops in this mixture for two hours.
Drain the chops and pat them dry on paper towels.
Mix the egg and water.
Dip the chops in this mixture.
Combine the bread crumbs, cheese and parsley.
Coat both sides of the chops with the crumb mixture.
In an ovenproof skillet, brown the chops in the remaining olive oil mixed with the butter.
Cover, and bake the chops in a preheated 350° F. [180° C] oven for 45 minutes to one hour.
