Ingredients
1 broccoli, cut into flowerets, 1 inch (2.5 cm) in diameter
Batter
1/2 Cup (125 ml) flour
1 Cup (250 ml) beer or water
2 tbsp (30 ml) melted butter
Pinch of salt
1 egg yolk
1 egg white, salted and beaten into stiff peaks

– Preheat deep-fryer to ,400 °F (205 °C).
– In a saucepan filled with lightly salted boiling water, cook broccoli for 4 minutes. Rinse under cold water, drain and set aside.
