 Onion3 Tablespoon, chopped
 Celery3/4 Cup (16 tbs), chopped
 6 tablespoons Butter or other Fat, melted
 Salt1 Teaspoon
 Pepper1 Dash
 Thyme1 Teaspoon
 4 cups Bread Crumbs, day-old or soft

Directions

Saute onion and celery in butter or other fat for about 10 minutes or until tender.
Combine with rest of ingredients.
Mix thoroughly.
If stuffing is too dry, add 1 tablespoon water, milk, fish stock, or lemon juice.
