 Sandwich Bread- 1 large loaf, crust removed and cut in cube
 Eggs- 4 hard-cooked, finely chopped
 Sweet onion1 Large, finely chopped
 Mayonnaise1 Pint
 Horseradish1 Teaspoon
 Small Shrimp- 2 pounds, cooked, shelled, and deveined
 Tomatoes2 Medium, quartered

Directions

MAKING
1) In a bowl, place together eggs, onion, mayonnaise, horseradish, olives, and bread cubes.
2) Fold the egg mixture lightly until well mixed.
3) When ready to serve, mix in the shrimps.

SERVING
4) Pile the shrimp mixture on a platter and surround with quartered tomatoes and serve.
