Bread Pudding Recipe

This is one of those great bread pudding recipes. You will fall head over heels in love with this Bread pudding recipe. I am sure you will make it almost every other day from the day you try it!

Ingredients

 
3 eggs, beaten or 5 egg whites
 
10 oz (300 g) soft tofu, mashed
 
1 tsp (5 ml) vanilla
 
1/2 tsp (3 ml) cinnamon
 
1/2 tsp (3 ml) nutmeg
 
1 cup (240 ml) , granulated sweetener
 
4 cups (960 ml) stale bread, grain, raisin or whole wheat, cubed
 
1 cup (240 ml) Instant Soy Beverage, reconstituted
 
1/2 cup (120 ml) nuts and/or raisins, optional

Directions

Mix eggs and tofu in an 8x8-inch baking pan.
Add vanilla, cinnamon, nutmeg and Devanswet.
Add cubed bread to tofu mix, then soy beverage.
If desired, add nuts and/or raisins.
Mix well.
Bake at 350°F (180°C) for 50 minutes or until center is set.
