Ingredients
2 tablespoons soft butter
12 thin slices white bread with crusts removed, well buttered and cut into quarters
1 cup seedless raisins
1/2 teaspoon apple pie spice
1 1/2 tablespoons light brown sugar
Egg Custard:
4 eggs
2 1/2 cups milk
4 tablespoons sugar
1/2 teaspoon vanilla
1/3 cup light brown sugar
Directions
1 Use the soft butter to grease the base and sides of a 30 x 20 x 5cm/ 12x8x2 inch ovenproof glass dish.
2 Cover the base of the dish with a layer of the bread, buttered side up.
3 Sprinkle with half the raisins, half the spice and half the brown sugar.
4 Add a second layer of bread and spinkle on the remaining raisins, spice and brown sugar.
5 Top with a final layer of bread, buttered side up.
6 To make the egg custard: beat the eggs in a 1.75 litre/3 pint (7 1/2 cup) jug.
7 Put the milk, sugar and vanilla in a 1 litre/1 3/4 pint (4'/2 cup) jug and microwave on full power for 3 1/2 minutes.
8 Pour the hot milk mixture onto the eggs, beating well with a rotary whisk.
9 Strain the mixture onto the bread and leave to stand for 15 minutes to allow the bread to absorb most of the liquid. Do not cover.
10 Microwave on power 5 for 12-15 minutes. Allow to stand for 5 minutes until set.
