Ingredients
1 1/2 Cups Flour
1/4 Cup White Sugar
1/4 Cup Brown Sugar
11/2 Tsp. Baking Powder
1/2 Tsp. Soda
1/4 Tsp. Ginger
1/2 Tsp. Cinnamon
3/4 Tsp. Mace
Pinch Salt
2/3 Cup Chopped Nuts
1 Tbsp. Grated Lemon Rind
2 Eggs
2 Tbsp. Butter, Melted
1 Cup Buttermilk
1/2 Cup Applesauce Mixed With 1/4 Tsp. Cinnamon
Directions
Mix flour, sugar, brown sugar, baking powder, soda, and spices.
Add chopped nuts and grated lemon rind, blending well.
In another bowl, whisk eggs, butter, and buttermilk, adding quickly to dry ingredients.
Fill muffin cups one-half full.
Add one spoonful of applesauce, then cover with batter.
Bake until lightly browned.
Bake at 400 degrees 20 minutes
