Brazilian Beans And Rice Recipe

Brazilian beans and rice is a vegetable and rice recipe. Filling and delcious, this rice recipe is cooked along with beef anf pork sausages. Skillet cooked, it is flavored with black bean soup and spices like garlic and cayenne. Fruited with added bananas, this brazilian rice gives you a gret taste of the tropics.

Ingredients

 
3 green-tip, medium Bananas
 
1 large onion, chopped
 
1 large clove garlic, pressed
 
2 tablespoons minced fresh ginger root
 
1 tablespoon vegetable oil
 
1/2 pound ground beef
 
1/2 pound bulk pork sausage
 
1 teaspoon ground cumin
 
1/4 teaspoon cayenne pepper
 
1 can (15 1/4 ounces) kidney beans
 
1 can (11 ounces) black bean soup
 
1 can (8 ounces) stewed tomatoes
 
2 teaspoons minced cilantro or parsley
 
4 to 6 cups shredded lettuce
 
3 to 4 cups hot cooked rice

Directions

Cut bananas in half crosswise, then lengthwise.
In large skillet, saute onion, garlic and ginger in oil; push to side of skillet.
Add bananas; saute 30 to 45 seconds.
Remove bananasi to plate.
Add beef, sausage, cumin and cayenne; brown, stirring in onion mixture.
Add undrained beans, soup and tomatoes.
Cover; simmer 30 minutes, stirring occasionally.
Remove from heat.
Stir in cilantro.
Place bananas on top.
Cover; cook 1 minute.
Mound 1 cup lettuce on each plate.
Top with 1/2 cup rice, then bean mixture, spooning bananas to side.
