Brazil Nut Melts Recipe
Ingredients
| Shortening | 1⁄2 Cup (8 tbs) | |
| Sugar | 1⁄3 Cup (5.33 tbs) | |
| Egg yolks | 2 | |
| Ground brazil nuts | 6 Tablespoon | |
| Grated lemon rind | 1⁄2 Teaspoon | |
| Salt | 1⁄8 Teaspoon | |
| Cake flour | 1 Cup (16 tbs) | |
| Orange juice | 3 Tablespoon | |
| Thinly sliced brazil nuts | 1⁄2 Cup (8 tbs) | |
| Confectioners' sugar | 1 Tablespoon |
Directions
Cream shortening, add sugar and egg yolks and cream thoroughly.
Mix the ground nuts, lemon rind, salt and flour together and add to the creamed mixture alternately with the orange juice.
Fold in sliced nuts, drop by teaspoons onto a greased cookie sheet and bake 10 to 12 minutes at 400°F.
While hot roll in confectioners' sugar.
Makes 40 small cookies.
