Brandy-Fired Fried Chicken Recipe

Ingredients
| Fryer chicken | 3 Small | |
| Butter | ||
| 1/2 c. apple brandy | ||
| Chopped olives | ||
| Chopped savory, thyme or oregano | ||
| Chopped parsley | ||
| Ground pepper | 1 To taste | |
| White wine | 1 Cup (16 tbs) | |
| Salt | To Taste | |
Directions
Brown chicken in butter in very heavy skillet.
Cook slowly 20 minutes, turning occasionally.
Place in large warm casserole.
Gently warm brandy in open saucepan.
Touch a match to it.
When flaming, pour over chicken.
Add olives and seasonings.
When blaze has gone, pour wine over chicken.
Cover, bake in a 325 to 350 degreeoven for 1 hour.
