Brandy Buttered Cornish Hens Recipe
Brandy buttered cornish hens is a fruity and savory chicken or hen recipe. Prepared with a fruit derived brandy, the brandy buttered cornish hens is made with a pecan stuffing for a rich taste and roasted to serve with apple slices and parsley.
Ingredients
4 Cornish hens
Salt and pepper
Pecan Stuffing
1/3 cup butter or margarine, melted
3 tablespoons apricot , peach, or plum flavored brandy
Fresh parsley sprigs
Apple slices
Green grapes
Directions
Remove giblets from hens; reserve for other uses, if desired.
Rinse hens with cold water, and pat dry; sprinkle cavities with salt and pepper.
Stuff hens with Pecan Stuffing, and close cavities.
Secure with wooden picks; truss.
Brush hens with butter, and sprinkle generously with pepper.
Combine remaining butter and brandy.
Place hens, breast side up, in a shallow pan.
Bake at 350° for 1 to 1 1/2 hours or until juices run clear when thigh is pierced with a fork, basting frequently with brandy mixture.
Garnish with parsley, apple slices, and grapes.
