Brandied Peaches Recipe

Ingredients
1 peck peaches
1 qt. brandy
Sugar
Directions
Remove skins from peaches, by plunging them into boiling water, then into cold, and rubbing skins off.
Weigh peaches and allow 1/2 their weight in sugar.
Pack peaches in stone crock or into jars, allowing a layer of peaches, then a layer of sugar until all are used.
Pour brandy over whole.
It jars are used, seal immediately and let stand several months before using.
If crock is used, cover with heavy piece of muslin and cover.
Store in cool place.
