Ingredients
1/2 cup butter or margarine
2 turkey legs, skinned
1 oz brandy
2 tbsp shallots, minced
2 tbsp parsley, chopped
1/4 tsp thyme
Salt and pepper
1/2 cup white wine
1/2 cup heavy cream
Directions
In a casserole dish, over low heat, melt butter.
Lightly brown turkey legs all over.
Continue cooking 15 minutes, turning meat from time to time.
Pour in brandy.
While stirring dish, flambe until flames extinguish.
Mix in remaining ingredients, except cream.
Cover.
Simmer 45 minutes or until turkey is tender.
Remove turkey legs from casserole dish.
Fold cream into cooking juices.
Stir to a smooth sauce.
Transfer turkey legs to a serving dish.
Ladle sauce on top.
