Brandied Peach And Plum Soup Recipe
Ingredients
2 cups each diced fresh peaches and plums
1-1/2 cups each water and dry red wine
2/3 cup sugar
1 slice lemon
One 4-inch cinnamon stick
2 tablespoons cognac
Finely minced fresh mint
Directions
Cook peaches, plums, water, wine, sugar, lemon and cinnamon, covered, until fruits are soft.
Discard lemon and cinnamon; force fruits through sieve.
Add cognac, chill and adjust to taste, adding sugar and/or cognac as needed.
Garnish with mint.
