Bran N' Cheese Muffins Recipe
These simple yet healthy bran and cheese muffins aer for those who want to snack while watching their weight. Baked with buttermilk, bran cereal and cheese, this muffin is easy to make and really light and nutritious.
Ingredients
1 cup All-Bran cereal 250 mL
11/4 cups buttermilk or sour milk 300 mL
1 egg
1/4 cup vegetable oil 50 mL
11/2 cups all-purpose flour 375 mL
1/4 cup granulated sugar 50 mL
11/2 tsp baking powder 7mL
1/2 tsp baking soda 2mL
1/2 tsp salt 2mL
1 cup grated sharp Cheddar cheese 250 mL
Directions
In a small bowl, combine cereal and buttermilk.
Let stand 5 minutes.
In another bowl beat egg.
Add oil and cereal mixture.
In a large bowl, combine flour, sugar, baking powder, baking soda, salt and cheese.
Add egg mixture, stirring just until moistened and lumpy.
Spoon batter into prepared muffin tins, filling cups three-quarters full.
Bake in preheated oven for 20 to 25 minutes.
HINT: To prevent ajilock of cheese from becoming moldy, wrap a cloth saturated in white vinegar around the cheese.
