Bran Muffins With Variations Recipe

Ingredients
1 Cup 100% Bran, Unprocessed
1 Cup Boiling Water
1/4 Cup Margarine
1/4 Cup (1/2 Stick) Unsalted Butter, Room Temperature
1 Cup Sugar
2 Eggs
2 Cups Buttermilk
2 Cups All Bran Cereal
2 1/2 Tsp. Baking Soda
1/2 Tsp. Salt
2 1/2 Cups Sifted All Purpose Flour
Directions
Combine 100% bran with water in small bowl.
Cream shortening and butter with sugar in medium bowl.
Add 100% bran and blend well.
Gradually beat in remaining ingredients, blending well after each addition.
For variations: add chopped nuts, dates or finely-grated orange peel, pecans, coconut or a spoonful of jelly in the center.
Bake at 400 degrees 20 to 25 minutes
