Bran Muffins Recipe
Ingredients
1 cup bran
1 cup whole wheat pastry flour
1 teaspoon cinnamon
2 tablespoons oil
1 cup milk
4 egg yolks, beaten
3 tablespoons honey or molasses
1/2 cup raisins, sunflower seeds, or unsalted nuts
4 egg whites
Directions
Preheat oven to 375°F.
In a medium size bowl, combine bran, flour, and cinnamon.
In another bowl, combine oil, milk egg yolks, and honey or molasses.
Add to the dry ingredients.
Add the raisins, seeds, or nuts or a combination of them, as you like.
Beat the egg whites until stiff and fold them into the batter.
Bake in an oiled muffin pan or pyrex custard cups 25 minutes.
