Bran Muffins Recipe

These simple bran muffins are baked with bran and sifted flour along with molasses for sweetness. Easy to fix and healthy, these bran muffins can be served for breakfast for a filling start to the day or as a snack.

Ingredients

 
1 cup sifted flour
 
2 1/2 teaspoons baking powder
 
1/2 teaspoon salt
 
1 egg
 
2 tablespoons soft shortening
 
1/4 cup sugar or molasses
 
3/4 cup milk
 
1 cup bran

Directions

Heat oven to 400°.
Grease muSn tins.
Sift flour, baking powder, and salt into a bowl.
Set aside.
Put egg, shortening, sugar, milk, and bran into the Osterizer container; cover and process at MIX until blended.
Pour over dry ingredients in bowl and stir only until the flour is moistened.
Fill muffin tins 1/4 full.
Bake 20 to 25 minutes.
