Bran Vegetable Meat Loaf Recipe
Ingredients
| Tomato juice | 1 Cup (16 tbs) | |
| 1 medium-size onion, quartered | ||
| Garlic | 1 Clove (5gm) | |
| 1 stalk celery, cut into 1-inch pieces | ||
| Carrot | 1 , cut in to chunks | |
| Parsley sprigs | 4 Small | |
| 1 cup chopped broccoli or zucchini | ||
| Ground beef | 1 1/2 Pound | |
| Salt | 1 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| Oregano | 1 Teaspoon | |
| Egg | 1 | |
| Bran | 3/4 Cup (16 tbs) | |
Directions
Preheat oven to 350°F.
In electric blender, combine tomato juice, onion, garlic, celery, carrot, parsley and green vegetable.
Process until completely pureed.
In a large bowl, mix remaining ingredients.
Add pureed vegetables, combining well, and put mixture into a 9x5x3-inch loaf pan.
Bake in preheated oven for 1 to 1 1/4 hours.
Serve with Basic Gravy or Tomato Sauce.
