3 cups bran flakes
 
1 14 cups all-purpose flour
 
1/2 cup sugar
 
1 1/4 teaspoons baking soda
 
1/4 teaspoon salt
 
1 egg
 
1 cup buttermilk
 
1/4 cup salad oil

Directions

1. Preheat oven to 400°F. Grease eight 3" by 1 1/2" muffin-pan cups.
2. In bowl, mix first 5 ingredients. In small bowl, beat egg, buttermilk, and salad oil until blended. Stir egg mixture into flour mixture just until moistened (batter will be lumpy).
3. Spoon batter into muffin-pan cups. Bake 25 minutes or until browned and toothpick inserted in center comes out clean. Immediately remove muffins from pan; serve warm. Or cool on wire rack to serve later; reheat if desired.
