Homemade Bran Muffins Recipe
Ingredients
1 1/2 cups whole bran cereal
1 cup buttermilk
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/3 cup packed brown sugar
1 beaten egg
1/4 cup cooking oil or melted shortening
3/4 cup raisins or snipped pitted dates (optional)
Directions
Combine bran and buttermilk; let stand till liquid is absorbed, about 3 minutes.
In mixing bowl stir together flour, baking powder, baking soda, and salt; stir in brown sugar.
Combine cereal-milk mixture, egg, and oil or melted shortening; add all.
At once to dry ingredients, stirring just till moistened.
Fold in raisins or dates, if desired.
Fill greased muffin pans 2/3 full.
Bake at 400° for 20 to 25 minutes.
