Bran Banana Nut Bread Recipe
Ingredients
| Shortening | 1/4 Cup (16 tbs) | |
| Granulated Sugar | 1/2 Cup (16 tbs) | |
| 1 egg, well-beaten | ||
| Bran | 1 Cup (16 tbs) | |
| Ripe bananas | 1 1/2 Cup (16 tbs), mashed | |
| Vanilla extract | 1 Teaspoon | |
| All purpose flour | 1 1/2 Cup (16 tbs) | |
| Baking powder | 2 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Baking soda | 1/2 Teaspoon | |
| 1/2 c. chopped nut meats | ||
Directions
Work the shortening with a spoon until fluffy and creamy; then add the sugar gradually, while continuing to work with a spoon until light.
Add egg and beat well.
Add the bran, bananas, and the vanilla.
Sift together flour, baking powder, salt, and soda; add to first mixture with the nut meats, stirring only until flour disappears.
Pour into a greased or oiled loaf pan about 9" x 5" x 3" with waxed paper in the bottom, and bake in a moderate oven of 350°F for 1 hr., or until done.
