Braised Tongue With Aspic Jelly Recipe
Ingredients
| Beef tongue- 1 | ||
| Onions | 2 | |
| Celery- 1 stalk | ||
| Cloves | 4 | |
| Sugar | 1 Teaspoon | |
| Mace- 1 blade | ||
| Thyme | 1 Bunch (100gm) | |
| Parsley | 1 Bunch (100gm) | |
| Gelatin | 1 box | |
| Cold water | 1 Cup (16 tbs) | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
GETTING READY
1.Start by washing and scrubbing the tongue in salt water
MAKING
2.In a pot, simmer the tongue till it turns tender
3.Now remove the skin of the tongue
4.In a stew-pan, place the tongue along with onion, celery, cloves, salt and pepper
5.Cover these ingredients with liquor in which it was boiled
6.Now add sugar, mace, thyme and parsley
7.Simmer for 2 hours
8.Now take out the tongue
9.Add to the liquor gelatin, soaked in the cold water, boil for 2 minutes
10.Keep stirring constantly, strain and pour over the tongue
