Braised Pork With Apples Recipe
The braised pork with apples is a flavorful and savory recipe prepared with lean pork strips. Cooked in the oven along with apples and onions with sage for flavor, the braised pork with apples is simply seasoned with with salt and pepper and can be served with vegetales on the side.
Ingredients
1 lb. lean belly pork strips
A little lard or dripping
Salt and Freshly ground black pepper
1 teaspoon dried sage
1 large onion, sliced
1 large cooking apple, peeled, cored and chopped
2 tablespoons water
12 oz. potatoes
A little butter
Directions
Heat the oven to 375 °F (Gas Mark 5, 190°C).
Trim off a little of the surplus fat from the edge of the pork strips, then fry them in lard or dripping to brown on both sides.
Lay the pork strips on the bottom of a casserole and season with salt and freshly ground black pepper.
Sprinkle on the dried sage.
Fry the onion to a pale golden colour then arrange over the pork together with the chopped apple.
Season with a little more salt and pepper, and pour on the water.
Peel and slice the potatoes thinly and arrange them on top of the casserole—overlapping like slates on a roof.
Season with more pepper and salt, dot with a few flecks of butter and bake, uncovered, for 1 hour.
Serve with a green vegetable.
