Braised Jerusalem Artichokes Recipe

Ingredients
2 teaspoons olive or vegetable oil
1/2 cup diced onion
2 garlic cloves, minced
2 cups sliced pared Jerusalem artichokes (cut crosswise into 1/8-inch-thick slices)
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup each dry white wine and water
1 teaspoon chopped fresh parsley (optional)
Directions
In 8- or 9-inch nonstick skillet heat oil over medium-high heat; add onion and garlic and saute until onion is lightly browned.
Add artichoke slices, salt, and pepper and saute for 5 minutes; add wine and cook until almost all liquid has evaporated.
Add water, cover, and let simmer, stirring occasionally, until artichokes are tender, about 15 minutes.
Serve sprinkled with parsley if desired.
