Braised Elk Swiss Steak Recipe
Ingredients

| Elk round steaks | 2 Pound | |
| Flour | 1 Cup (16 tbs) | |
| Dry onion soup mix | 100 Gram | |
| Beef bouillon cube | 1 | |
| Flour | 1⁄4 Cup (4 tbs) |
Directions
Remove all bone and fat from steaks; pound flour thoroughly into steaks.
Quarter each steak; fry in fat in skillet until lightly browned on each side.
Mix onion soup mix with 1 cup water; pour over steaks.
Cover; simmer for 15 to 20 minutes.
Remove steaks from skillet.
Dissolve bouillon cube in 1 cup water; add to pan drippings.
Mix 112 cup water with flour.
Add flour mixture to stock gradually, stirring con- stantly until thickened.
Season to taste.
Cook for 5 minutes longer.
