Braised Chicory Recipe
Ingredients
1 1/2 lb. chicory
1 oz. butter
3 tablespoons water
1 teaspoon lemon juice
1 teaspoon castor sugar
1/2 teaspoon Salt
1/8 teaspoon freshly ground black Pepper
Directions
Put the chicory in a pan of boiling water and boil for 2 minutes.
Drain in a colander and rinse with cold water.
Butter a 2 pint (5 cup) shallow ovenproof dish with half of the butter.
Arrange the chicory in the dish.
Add the remaining ingredients and dot with the remaining butter.
Cover with a piece of greaseproof paper, then a lid.
Cook at 300°F, Gas Mark 2 for 1-1 1/4 hours until tender.
Lift carefully from the pan and serve with the juices from the dish.
