 6 lamb's brains, precooked
 1/2 cup milk, hot
 Whole wheat flour3 Tablespoon
 Nutmeg1/8 Teaspoon
 Oil3 Tablespoon
 Lemon juice1

Directions

Cut brains in half, lengthwise.
Dredge in flour.
Heat oil.
Saute brains and set aside.
Gradually add remaining ingredients to pan and blend thoroughly.
Continue to cook, stirring until thickened.
Return brains to pan, cover and simmer for 20 minutes.
