Braised Belgian Endive Recipe

Ingredients
8 Belgian endive
1 tablespoon lemon juice
1/2 cup chicken stock or canned chicken broth
Salt and white pepper
1 tablespoon butter
Directions
Preheat the oven to 350° F.
Butter a large ovenproof casserole.
Place the endive in the prepared casserole in a single layer.
Add the chicken stock, lemon juice, and salt and white pepper to taste.
Dot with the butter.
Cover the casserole tightly.
Bake at 350° F for 30 minutes or until tender, turning the endive over after 15 minutes.
Rapidly reduce the pan juices to 2 tablespoons.
Pour over the braised endive.
