Ingredients

 4 lbs. venison fillets
 Bacon3/4 Pound
 Currant jelly1/4 Cup (16 tbs)
 Wine vinegar1/2 Cup (16 tbs)
 Cream1/2 Cup (16 tbs)
 Margarine2 Tablespoon
 Flour1/4 Cup (16 tbs)
 Beef broth2 1/2 Cup (16 tbs)
 1 carrot, cut up
 1 onion, cut up
 Garlic salt1/2 Teaspoon
 Pepper1/4 Teaspoon

Directions

Wrap bacon around venison.
Melt margarine in saucepan and brown meat.
Place carrot and onion in stock.
Add seasonings and browned meat.
Bake in 300°F.oven 2 hours.
Remove from oven and skim fat.
Mix flour in small amount of water to form a paste.
Stir into gravy.
Let cook until thickened.
Add jelly, wine and cream.
