Braised Turkey Breast Recipe
Ingredients
| 1 (6- to 7-pound) whole turkey breast | ||
| Water | 1/2 Cup (16 tbs) | |
| Basic Browning Sauce | ||
| Butter/Margarine | 1/4 Cup (16 tbs) | |
| All purpose flour | 2 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| 1/2 teaspoon onion salt | ||
| Pepper | 1/8 Teaspoon | |
| Tomato juice | 1 Cup (16 tbs) | |
| Turkey broth | 1 Cup (16 tbs) | |
Directions
Follow manufacturer's directions to completely thaw the turkey breast before cooking it.
Place thawed turkey breast, skin side down, on microwave roasting rack in a 12- x 8-inch baking dish.
Pour water in dish.
Cover with plastic wrap.
Microwave at MEDIUM half the estimated time.
Remove plastic wrap.
Carefully drain excess liquid into a 2-cup glass measure.
Reserve.
Brush entire turkey breast with Browning Sauce.
Turn turkey so that skin side is up.
Cover with plastic wrap and rotate dish 1/4 turn.
Microwave remaining half of estimated time.
Test for doneness by inserting standard meat thermometer into thick part of breast meat.
Avoid the bone.
It should be 175°.
Remove thermometer and return to microwave if more cooking is required.
Transfer turkey to a warm platter and keep hot.
To prepare sauce, pour rest of juice from turkey into 2-cup measure to total 1 cup broth.
Place butter in a 4-cup glass measure.
Microwave at HIGH 30 seconds to melt.
Stir in flour and seasonings.
Micro wave at HIGH 1 minute.
Gradually stir in tomato juice and broth.
Microwave at HIGH 3 to 4 minutes, stirring at 30 to 45 second intervals until thickened.
