Garlic Flavored Braised Red Cabbage Recipe

 Red cabbage1 Medium
 Salt pork1 Ounce, diced
 Bacon Slices2 , diced
 1 large onion, in narrow wedges
 Garlic2 Clove (5gm), halved
 Green chili pepper1 Tablespoon, chopped
 Dry red wine2 Cup (16 tbs)
 Salt To Taste
 Pepper To Taste

Directions

Preheat oven to 325 °F (160 °C).
Core cabbage. Cut in quarters and slice thinly. Place cabbage in bowl with cold water for 30 minutes. Drain and set aside.
Place salt pork in deep ovenproof saute pan. Cook 3 minutes over medium heat. Discard salt pork and add bacon to hot pan. Cook 3 minutes.
Add cabbage, onion, garlic and chili pepper. Season with salt and pepper; cook 12 minutes over low heat.
Pour in wine and bring to boil over high heat. Cover pan and braise 2 hours in oven.
