Braised Red Cabbage Recipe
Ingredients
| 40 g/ 1 1/2 oz lard | ||
| Red cabbage | 1 Medium, shredded | |
| 1 apple, peeled, cored and chopped | ||
| 300 ml / 1/2 pint cold water | ||
| 150 ml/ 1/4 pint vinegar | ||
| Salt | To Taste | |
| Brown sugar | 1 Tablespoon | |
| Cornflour | 1 Teaspoon | |
Directions
Melt the lard in a saucepan and add the cabbage.
Toss until coated with the fat, then stir in the apple, water, vinegar and salt.
Bring to the boil and simmer for about 1 hour or until tender.
If necessary, add more water or vinegar to the pan.
Stir in the sugar.
Dissolve the cornflour in a little water and add to the pan.
Simmer, stirring, until thickened.
Toss until coated with the fat, then stir in the apple, water, vinegar and salt.
