Ingredients

 Beancurd8 Ounce
 Oil2 Teaspoon
 Garlic2 Teaspoon, finely chopped
 Ginger2 Teaspoon, finely chopped
 Minced pork - 8 oz 225g
 Spring onions1 1/2 Tablespoon, finely chopped
 Chilli bean sauce or chilli powder - 1/2 teaspoon
 Sugar1/2 Teaspoon
 Dry sherry or rice wine - 2 teaspoons
 Dark soy sauce1 Tablespoon
 Whole yellow bean sauce - 1 tablespoon
 Peppercorns1/2 Teaspoon, roasted
 Chicken stock - 2 1/2 fl oz 70ml
 Coriander1 Tablespoon, finely chopped (Optional garnish)

Directions

GETTING READY
1. Prepare the bean curd and then cut it into 1/2 inch (1 cm) cubes and set it on a drain to remove the extra liquid

MAKING
2. Heat the oil in a wok and then add the garlic and the ginger to the pan. After a few minutes, add the minced pork and stir-fry for 2minutes till done.
3. Add the bean curd and bring the mixture to the boil. When it reaches the boiling point and turn the heat down to low.
4. Add the bean curd and mix it in gently to make sure that it does not break up. Let the mixture simmer for 15 minutes till done. Add more chicken stock if required

SERVING
5. Garnish with fresh chopped coriander and serve hot
