Ingredients
6 firm ripe pears, peeled, cored and halved
1/4 cup sugar
3 tablespoons unsalted butter, cut into bits
2 cups whipping cream, room temperature
3 to 4 tablespoons Cognac
2 to 3 tablespoons honey
1/2 teaspoon vanilla
Directions
Preheat oven to 400°F.
Place pears, cut side down, in single layer in 9 X 13-inch baking dish.
Sprinkle with sugar and dot with butter.
Bake until tender, about 35 to 40 minutes.
Remove from oven and reduce heat to 350°F.
Pour 1 cup whipping cream over pears and return to oven until sauce is thick and caramel colored, about 10 minutes, basting pears a few times with cream.
Allow to cool.
Whip remaining cream with Cognac, honey and vanilla.
