Braised Pears A La Bressane Recipe
|Pears||6 , peeled, cored and halved|
|Sugar||1⁄4 Cup (4 tbs)|
|Unsalted butter||3 Tablespoon, cut in bits|
|Whipping cream||2 Cup (32 tbs) (At Room Temperature)|

Place pears, cut side down, in single layer in 9 X 13-inch baking dish.
Sprinkle with sugar and dot with butter.
Bake until tender, about 35 to 40 minutes.
Remove from oven and reduce heat to 350°F.
Pour 1 cup whipping cream over pears and return to oven until sauce is thick and caramel colored, about 10 minutes, basting pears a few times with cream.
Allow to cool.
Whip remaining cream with Cognac, honey and vanilla.
