Ingredients

 Ghee50 Gram
 Onion1 Large, sliced
 Garlic3 Clove (5gm), sliced
 5cm piece root ginger, peeled and finely chopped
 2 green chillies, seeded and finely chopped or minced
 Chilli powder1/2 Teaspoon
 450g okra topped and tailed
 Water200 Milliliter
 Salt To Taste
 Coconut2 Teaspoon, desiccated

Directions

Melt the ghee in a large saucepan, add the onion, garlic, ginger, chillies and chilli powder and fry gently for 4-5 minutes until soft, stirring occasionally.
Add the okra, water and salt to taste.
Bring to the boil, then lower the heat, cover and simmer for 5-10 minutes until the okra are just tender, but still firm to the bite.
Stir in the coconut and serve hot.
