Directions
MAKING
1 In a pan, add the olive oil and heat on medium-high heat.
2 Add some sliced onions and cook, stirring.
3 Stir in the ground ginger, paprika, cumin, cinnamon and salt.
4 Gradually add in the chopped tomatoes and bring to a boil.
5 Add in the chicken thighs along with the garbanzo beans.
6 Cover and simmer for about 20 minutes.
SERVING
7 Serve hot with couscous (optional)
