Braised Liver With Endive And Bay Recipe

Ingredients

 
1 pound calfs liver
 
1 1/2 cups water
 
2 bay leaves
 
3/4 cup diced carrots
 
1/2 cup sliced celery
 
1/4 cup sliced onions
 
4 Belgian endives, halved lengthwise

Directions

In a medium-size saucepan, combine the liver, water, and 1 of the bay leaves.
Cover and braise at a gentle simmer for 20 minutes.
Remove from the liquid, place on a serving tray, and keep warm.
Combine the carrots, celery, onions, endives, and remaining bay leaf and steam for 10 minutes.
