 1.5-1.75kg leg of pork
 Salt To Taste
 Onions spring6
 Root ginger slice2 , chopped
 Light soy sauce150 Milliliter
 Dry sherry6 Tablespoon
 Soft brown sugar50 Gram
 Radish
 Waterlilies
 Turnip flowers
 Spring onions

Directions

Rub the pork with salt; do not score the skin.
Cut the spring onions into 3 pieces and place them in a large saucepan with the ginger, soy sauce and wine or sherry.
Stir in the sugar and add the pork, turning to coat it with the mixture.
Bring to the boil over moderate heat, cover and simmer for 2-2 1/2 hours, until very tender, turning occasionally.
Remove the pork from the pan and keep it hot.
Boil the sauce until it is well reduced and thickened.
Pour into a sauce bowl.
