Braised Lamb Shanks Recipe

Ingredients
3 tablespoons olive oil
6 lamb shanks
Salt and pepper to taste
1 can (16 ounces) tomatoes (undrained)
2 cups red wine
1/4 cup dried oregano
2 bay leaves
1/4 cup minced parsley
2 garlic cloves, minced
2 onions, quartered
Directions
1. Heat olive oil until it begins to smoke. Brown lamb shanks on all sides. Season with salt and pepper. Add tomatoes, wine, oregano, bay leaves, pars ley, garlic, and onion. Cover. Simmer 2 to 2 1/2 hours, or until meat is fork tender.
